Vegan almond butter cookies & ice cream sandwiches

Lately it seems like everyone has been hit with a little case of the blues. Maybe it’s the weather, since after finally getting a taste of summer, we’re back to chilly mornings and gloomy skies. I know I’ve been feeling pretty run down. Work has been a bit more stressful, the apartment has been a little too messy, and I can’t seem to pull myself out of this funk. Even our cat, Josie, seems like life just totally bums her out.

There are a few things that go a long way towards making me feel better; healthy food, exercise, relaxation and lots of sleep make all the difference in my mood and energy. Sometimes though, after a few days of feeling like life has beaten me up, I just don’t have it in me to make my batch of green smoothies. Sometimes I have absolutely zero desire to work out, and even setting the PVR seems like too much work. You know what I need on those days? Cookies. IceCream-Sandwich Yep, sometimes all I want are some warm cookies, my comfy clothes and a good veg. No, not a vegetable. When the blahs hit and you don’t want to do anything else, just mix up a batch of these dense and chewy Almond Butter Cookies. You’ll get it all together tomorrow. For today, there are cookies. Even better, use your cookies to make ice cream sandwiches. Don’t you feel better already?

Almond Butter Cookies


  • 1 cup almond butter
  • 1 cup almond flour
  • 1 tbs cornstarch
  • 3 tbs water
  • 1/2 cup sugar
  • 1/4 tsp salt

Directions: In a large bowl, sift together flour, sugar and salt. In a separate bowl, mix cornstarch with water until dissolved (this is your egg replacement). Add, along with almond butter, to large bowl, and mix well. Using a spoon, drop dough on greased baking sheet and form cookies with 2″ diameter. Bake at 350F for 15 minutes.

For ice cream sandwiches, whip up some One-Ingredient Banana Ice Cream.
