Today we’re travelling across the country to Kelowna, British Columbia. Having just wrapped up a big project at work this week, it’s the perfect time for a much needed vacation.
But I still have more Canada Day recipes for you! I’ve already shared my Canada Day Pancakes and Canada Day Donuts and I’ve lined up some more Canada Day-themed recipes leading up to July 1st, so definitely check back. Some are vegan, some are gluten-free, all are easy and delicious. Bonus, they can all be easily adapted for Independence Day! I hope you enjoy and have a great weekend and holiday next week!
Overnight oats and chia pudding combine in this beautiful, indulgent parfait that you can enjoy for breakfast or dessert, or both!
If you’re going to be celebrating the Fourth of July, then just add blueberries and you have a festive and healthy treat.
Canada Day Chia Seed Parfait
(Yield: 4 servings)
- 1/3 cup chia seeds
- 1/4 cup rolled oats
- 1 cup unsweetened almond milk
- 1 tsp almond extract
- 1 tsp vanilla extract
- 1 tsp maple syrup
- 1 cup fresh raspberries
- coconut whipped cream
Directions: Add all ingredients to a bowl or jar. Stir well and cover. Refrigerate overnight, or for at least 1 hour. Layer with fresh raspberries and whipped cream. Enjoy!
