Cucumber Salad and Creamy Dill Dressing

This week’s Beauty Detox recipe assignment was to create a variation of Kimberly Snyder’s Cucumber Salad with an Asian Twist. Check out my previous Beauty Detox recipes.

I was a bit stuck on what to do since cucumbers are so versatile that I could probably come up with a different cucumber salad every day of the week. But I decided to keep it simple with a play on the classic cucumber salad that makes an appearance at most summer BBQs. This salad is usually made with dill and sour cream or Greek yogurt. I kept the dill, but substituted a basic dressing with a tahini base. Then I added a good dose of hemp seeds for lots of protein and a yellow tomato for colour.

With the tahini and hemp, this salad is filling enough to enjoy as a lunch meal or the perfect side for a summer picnic.

Cucumber Salad

(Serves 2-4)

  • 1 cucumber
  • 1/4 cup hulled hemp seeds
  • 1 tomato (I used yellow), chopped
  • 1 green onion, diced
  • 1 tbs sesame seeds

Creamy LemonTahini Dressing

  • 1/4 cup tahini
  • 2 tbs dill, chopped
  • 1 tbs tamari
  • 1 tbs lemon juice
  • 2 tbs water
  • pinch of salt

Directions:¬†Spiralize cucumber (or chop if you don’t have a spiralizer) and combine with other salad ingredients. In a separate bowl, combine ingredients for dressing and whisk well. Add dressing to salad and toss to coat. Enjoy!

  1. (That awkward moment when I didn’t even realize a spiralizer was a thing….)
    Seriously though, this looks super tasty! I think I may have to go out and get myself a spiralizer soon so I can try out this or something similar.

    • Haha it’s awesome. You can make zucchini and carrot pasta and other wonderful things. It’s crazy how much you get out of even a single carrot once it’s all spiralized! Mine does thin spaghetti strands as well as ribbons but there are all sorts out on the market. Go for it!
