This weekend was pretty gross and rainy, so it was perfect for getting in some meal prep. While I don’t do this weekly, when I do it really helps keep me on track with my healthy eating goals. Mike and I worked together and stocked the fridge with pre-portioned chicken (3 oz), sweet potato (150 g) and steamed broccoli and carrots (200 g). We also made a dozen muffin-tin eggs topped with cheese, and a week’s worth of green smoothies. An hour and a half on a cold, rainy day and the week’s meals got a whole lot easier.
I eat a salad for lunch at work almost every day. I usually make a huge salad at the beginning of the week with mixed greens, cucumber, carrots, tomatoes, red onions, and bell peppers. Then I toss some of that into a container along with tuna, chickpeas, or quinoa. I’ll top up the salad bowl throughout the week, and that’ll provide lunch and dinner salads for both of us for most days. It’s so much easier than having to chop up veg for every salad.
Having easy, healthy go-to options makes all the difference in staying on track!
We’ve finally started to firm up a lot of the wedding details, and started to commit to vendors. Although we’d been doing a ton of work on it and doing a lot of back and forth with vendors, until contracts are signed, things can’t be checked off the list.
Last week we met and confirmed our officiant and day-of-coordinator. We also got our contract from the caterer and just need to put down our deposit. We still have so much to do, but it feels great to get a few things checked off the list.
We’ve pretty much got our DJ, but we’re getting so annoyed because he’s so unresponsive and sooo slow. He tells us he’ll email us something and then nothing. Even after we follow-up multiple times. We really liked him when we met in person, and he’s the in-house DJ at the venue, so there are some benefits in terms of cost, but it’s hard to still go with the guy when we get the impression that he couldn’t care less about getting our business. We do have another good option, so we might have to go with that one. With how competitive the wedding industry is, I’m kind of surprised by how many unprofessional vendors we’ve encountered.
OH! The most exciting news is that I’ve finally found my dress! I fell in love with this dress a couple months ago, but my sister wasn’t with me when I tried it on, so I really wanted to get her opinion before I committed. We went back to the shop recently, and fortunately I still loved it just as much and my sister loved it, too. I’m so glad to have that one checked off the list. Before I started wedding dress shopping, I was really worried that I wouldn’t find anything I liked or that looked good on me. Regular shopping can be such a frustrating experience, but wedding dress shopping was a million times more fun. Most wedding dresses are so structured that they manage to hide all those lumps and bumps, so it wasn’t at all about finding a dress that fit ok…it was really just about finding the dress I loved most and felt the best in. There are so many beautiful dresses out there, and it was hard to make a choice but I feel like I chose the perfect one for me. I’m so excited to wear it and for Mike to see it!…7 months from now.
