Grilled Chicken Low-Calorie Pasta with Almond-Basil Pesto

Using 25 calorie nuPasta, this delicious Grilled Chicken Low-Calorie Pasta with Almond-Basil Pesto comes in at only 400 calories!
  • 1 package nuPasta fettuccine
  • 3 oz chicken breast, sliced
  • ½ cup sliced mushrooms
  • 1 cup, cherry tomatoes, halved
  • 2 cups fresh basil
  • ¼ cup + 1 tbs olive oil
  • ¼ cup almonds
  • 2 cloves garlic
  • 1 tbs grated Parmesan cheese
  • salt and pepper, to taste
  • red pepper flakes, optional
  • Parmesan cheese for serving, optional
  1. In a blender or food processor, combine basil, olive oil, garlic, almonds and Parmesan cheese
  2. Blend until smooth and season to taste
  3. Heat 1 tbs olive oil in a large pan over medium heat
  4. Sauté cherry tomatoes, mushrooms and sliced chicken breast until browned and chicken is cooked through (7-10 minutes)
  5. Drain and rinse nuPasta and combine in pan
  6. Toss with pesto, and red pepper flakes if desired
  7. Top with Parmesan cheese and serve
