Sugar-Free Basil Peach Pie

  • Sugar-Free, Dairy-Free, Gluten-Free Pie Crust:
  • 2.5 cups gluten-free flour
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ⅔ cup coconut oil, cold and solid
  • Basil Peach Pie Filling:
  • 4-6 peaches, peeled and sliced
  • ¼ cup gluten-free flour
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 6-8 fresh basil leaves, roughly chopped
  1. Bring a large pot of water to a boil and prepare an ice bath in your sink or a large bowl
  2. Score peaches with an X and place in boiling water until skin begins to peel off
  3. Using a slotted spoon, transfer to an ice bath
  4. When cool enough to handle, remove skins, pit and slice
  5. Preheat oven to 350F
  6. Prepare crust by mixing ingredients with a fork right in 9" pie plate
  7. Once dough is formed, press to fill pie pan (crimp edges if you want to get fancy) and refrigerate
  8. Prepare pie filling by mixing ingredients in a large bowl then transfer to pie shell
  9. Bake at 350F for 40-50 minutes, until golden
  10. Allow to cool for about 15 minutes before serving
